Fresh-Frozen Sea Snails In Shells
Sea snails in their banded brown shells, the aperture a warm apricot orange and the meat drawn back under a dark operculum. Four of them sit on a wooden board in close-up, three more wait on a speckled counter by a window, and a chef lifts a tray of five from the board with a pair of tongs.
The meat is firm and slightly chewy with a sweet, mineral flavour. Boil them briefly and eat them with a skewer and a chilli dip, or simmer them in a light broth with ginger and spring onion.
