Fresh-Frozen Crab Legs On Ice
Long crab legs in a bright orange-red shell, split at the joint to show the white meat inside. The legs are laid out by a kitchen sink on a pale stone drainer, then on a white cutting board with the shell cracked open, and finally plated on a speckled ceramic plate still steaming.
The meat is sweet and delicate and comes away from the shell in long pieces. Steam or boil the legs for a few minutes to heat through, or serve them chilled with a lemon and mustard dip.
